What if I am out, where I do not have a data connection? Are then the displayed times dependent on the device internal time?

Yes, in the absence of a reachable NTP server, all times are computed from the device time. However, the device clock is automatically and continuously synchronized to the mobile carrier timebase which is expected to be accurate up to the second, UTC time.

The GPS icon showed up on the device's status bar for some time and then disappeared, but the latitude is still set by Network Location. Why?

The GPS was unable to get a fix because you are indoors, or the GPS fix accuracy was lower than the last Network fix.
